I’ve been avoiding all things fall because for once in my life I am just not ready. And there’s still some summer left to enjoy here in Chicago. ☀️ But I’m starting to crave my favorite fall-inspired meals, like this plant-based mac & cheeze, and I guess maybe I’m open to welcoming fall soon. 🍁
Clean out the fridge time — which I love because random stuff in a bowl is my favorite meal. 🥦 Roasted broccoli & red bell pepper, green peas, couscous tossed with vegan pesto, and some simple lemon tahini dressing (just tahini mixed with fresh lemon juice and water to thin. The key is to use a good tahini that’s already silky & smooth). 🍋 I’ve included an easy pesto recipe below with an oil-free option. ✌️
I’ve never been a huge green bean fan — could take them or leave them, but these spicy ginger green beans might have me changing my ways. Recipe below. 💚
Grilled zucchini forever 🥰. Love tossing it on pasta, pizza, a veggie sandwich with hummus and other roasted veg… so many options, including eating eat straight off the grill. 💚 Today is a rare busy day when I actually have to go out and remember how to speak to people. My favorite kind of meal. Gimme quinoa and roasted veggies any day, and I won’t be disappointed.😋 Sending everyone so much love and strength — it’s been a particularly tough week. I plan to take care of myself this weekend by sleeping a lot, curling up with a book (and my cats), and spending some time outside. 💚
Oats cooked with cinnamon, topped with creamy almond butter, banana & berries will forever be my favorite breakfast.🥣

I made this last weekend, and even after a couple days of leftovers, I already want to make it again! This has been one of my favorite recipes for almost a decade now, and I can’t believe I’ve never shared it. I never gave it a name, so let’s just go with Nutty Noodle Salad for now 🤷🏻‍♀️ It’s crunchy, sweet, spicy, fresh, slurpy... all the good things. 💚
My advice to you is to make a giant vat of macaroni salad, safely share some with a friend, and keep chugging along as best you can. Sending you all lots of love. 💚
